Det här är något för den seriöse fikaälskaren!
Denna cheesecaken innehåller det mesta som gör livet lite extra bra – choklad, vanilj, kola, rostade pekannötter och en smarrig oreobotten (med tillhörande väggar dessutom!).
Vad kan bli fel? Inte mycket, förutom att du kanske försöker äta upp hela tårtan själv.
Ingen bra idé. Denna tårtan är mäktig!
På Engelska skulle man troligtvis kalla den här cheesecaken för “turtle cheesecake” (efter någon slags chokladkaka tror jag). Men det tycker inte jag låter särskilt gott, så därför kallar jag den istället choklad- och vaniljcheesecake med oreobotten (och väggar), kola och rostade pekannötter.
Mycket bättre!
Har du inte lust att göra egen kola och ganache kan du köpa färdig kola och chokladsås istället.

Ok, so this cheesecake is not for the weak.
It contains everything (well, almost) that makes life good – chocolate, vanilla, caramel, roasted pecans and a lovely oreo crust.
What could go wrong?
Well, not much. Except if you try to eat it all by yourself. Don’t.
Some would probably call this cheesecake a “turtle cheesecake” (because of something called turtle bars, right?). But I’m not going to. It doesn’t sound right to me.
So I’ll just call it Chocolate and vanilla cheesecake with an oreo crust, caramel and roasted pecans. Sounds much better, right?
If you don’t feel like making your own caramel and ganache you could probably buy ready-made caramel and chocolate sauce.
Ingredienser:
Oreobotten:
300 gram oreokex
100 gram smör, smält
Cheesecake:
600 gram philadelphiaost
1 burk sötad kondenserad mjölk (cirka 397 gram)
½ dl socker
4-5 msk nypressad citronsaft
2 tsk vaniljextrakt
3 stora ägg
100 gram mörk choklad
Kola:
2 ½ dl grädde
2 dl socker
30 gram smör
Ganache
100 gram mörk choklad
1 dl grädde
Dekoration:
Rostade pekannötter
Så här gör du:
Botten
1.Krossa oreokexen till fina smulor och blanda smulorna med det smälta smöret.
2.Lägg bakplåtspapper i botten på en springform, 18–24 cm i diameter (om formen är 18 cm i diameter bör den vara åtminstone 7 cm hög). Tryck ut degen i botten och upp på kanterna av springformen. Ställ in i kylen.
Cheesecake
1. Värm ugnen till 160°.
2. Koka upp en kastrull med vatten till ett vattenbad.
3.Vispa philadelphiaost, kondenserad mjölk, socker, citronsaft och vaniljextrakt krämigt. Tillsätt äggen och vispa i ytterligare 1 minut. Hacka chokladen och smält den i vattenbad eller i mikrovågsugn. Låt svalna och blanda den sedan med cirka 1/3 av cheesecakesmeten. Ta fram den förberedda bakformen ur kylen och häll i chokladsmeten först. Jämna till lagret om det behövs. Häll sedan över resten av cheesecakesmeten i formen.
4.Ställ bakformen i en större ugnsform och häll varmt vatten runt om. Vattnet ska gå upp till hälften av bakformen. Grädda i cirka 1 timme och 15 minuter, eller tills cheesecaken fortfarande är aningen dallrig men fast runt kanterna. Låt svalna helt i formen innan du täcker över formen och ställer in den i kylen över natten.
Kola:
1.Värm grädden försiktigt i en liten kastrull.
2.Häll sockret i en annan kastrull och värm det på medelstark värme. Rör inte om! När sockret börjar smälta och bli brunt i kanten rör du försiktigt med en sked inåt mitten tills allt socker har smält. Låt stå på värmen tills sockret blir gyllenbrunt, men var försiktig så att det inte blir bränt!
3.Tillsätt grädden sakta – se upp för det kommer att bubbla till ordentligt! rör försiktigt, tillsätt smöret och rör lite till. Låt svalna i några minuter och häll upp i en ren burk.
Rostade pekannötter
1.Värm ugnen till 175 c.
2.Sprid ut nötter i en form och rosta i ugnen cirka 10-15 minuter eller tills nötterna är gyllenbruna. Låt svalna.
Sätta ihop tårtan:
1.Ta fram cheesecaken ur kylen. Placera den på ett tårtfat eller på en tårtbricka. Plocka bort kanterna på formen (låt botten sitta kvar om du tycker det är svårt att ta av den).
2.Häll kola (så mycket du vill) över tårtan och låt rinna ned över kanterna. Låt stelna en stund i kylen. Under tiden kan du förbereda chokladganachen.
Ganache:
1.Hacka chokladen och lägg den i en skål.
2.Värm grädden i en kastrull tills den når kokpunkten
3.Häll grädden över den hackade chokladen. Vänta i 30 sekunder och rör sedan blandningen glansig och slät. Låt svalna.
Sätta ihop tårtan, forts.
1.Ta fram tårtan ur kylen
2.Häll chokladganache över tårtan och låt den rinna ned över kanterna. Jobba snabbt så att chokladen inte stelnar. Jämna till med en spatel om det behövs.
3.Dekorera med rostade pekannötter.

Dock undrar jag när jag gjorde den var min springform för liten, jag fick inte plats med all cheesecake i den, lite synd. (min är 24 cm.)
Jag undrar hur du lyckades med att få upp oreobotten så jämnt och fint på kanterna? Jag tycker det var jättesvårt att få upp det hela vägen och få det jämnt :-/

Jag använder en springform med extra höga kanter (köpt på Lyckas med mat) som får plats med mycket mer smet.
Jag vet inte hur, det bara gick väldigt lätt att klä kanterna med oreobottnen 🙂 Du kanske ska prova med lite mer smör?!

a "dl" is a little more than 1/3 cup and a little less than 1/2 cup.
It would be easier for you to pick up an inexpensive kitchen scale for the weight measurements, much more accurate than cup measurements for solids.

Har bakat efter det här receptet ett par gånger och det har varit succé varje gång:-) Nu funderar jag på att göra den till min sons 2-årskalas, men väntar också ett barn till vilken dag som helst så jag undrar om den kan förberedas i förväg (utan kola, choklad o nötter) i frys?

This cake looks wonderful! But i think i've lost the idea:before i put the cake into the oven,i should put there a pan whith water and than i put a springform with cake into the pan with water,right? but won't water evaporate during baking?

Exactly! That's the easiest way to do it I think. Or you can put the large pan in there first and pour the water into it 🙂

Hi. I want to try this cake but I wasn’t sure what you meant about how to use the aluminum foil? It’s not lining the inside of the pan is it? Is it covering the outside, underneath and then up the sides to protect the water from leaking into the pan?
