Also known as the best chocolate mousse I’ve ever made. Super fluffy, smooth and delicious. It’s SO easy to make and no one will ever suspect that you made mousse from chickpea brine. It’s funny how I now have two open packages of chickpeas in the fridge after making this mousse a couple of times (I’ll make hummus, win win!). Every time I open a package of chickpeas or beans from now on, I’ll be making this chocolate mousse instead of getting rid of the brine. It’s a good excuse, and nothing goes to waste!

So glad you like it Ashley 🙂 It’s even possible to make without the sugar, but I think the texture and flavour improve with that little bit of sugar.

Super excited to try this! Have you tried freezing it? I was thinking about swapping “normal” mousse in a cake with this, do you think it would work?

I haven’t tried freezing it, no! 🙂 I bet it would work in a cake as it does become quite firm. I’d probably increase the amount of chocolate though, just a tiny bit, to make sure it holds up inside a cake! Let me know if you give it a go 🙂

Would you be able to provide more details? Is the mousse watery? Perhaps you didn’t whip the aquafaba enough?
