Honestly, I don’t even know what to say. These muffins are to die for.
I just realized I have never baked real chocolate muffins before. Obviously I’ve made chocolate cupcakes, but these are something else. SO simple and chocolatey and good.
I looked into the oven as they were baking. They had been in the oven for 8 minutes or so, and they were completely overflowing. I thought it was going to get worse (I hate cleaning my oven!), but it didn’t. I think they turned out really pretty, just the way I want my muffins to look. Overflowing and super chocolatey.
These two recipes must be two of my favorite simple chocolate recipes. I mean, they’re classics! Did you know that chocolate chip cookies is the second most popular search term on my blog (except for ‘call me cupcake’)?! I’m not surprised though, it’s a fabulous little cookie.
And on another note. You guys have spoken, and I have (finally) listened. From now on I will try to write all recipes in grams. I really should have done this a long time ago. I hope that works for you!
Double chocolate muffins
makes 12
300 g all purpose flour
80 g cocoa powder
1 tbsp baking powder
1/2 tsp baking soda
1/4 tsp salt
250 g granulated sugar
100 g butter, melted
250 ml buttermilk (about 1 cup or 8.45 US fluid ounces)
2 large eggs
150 g dark chocolate (70%), coarsely chopped
Heat oven to 200°c (392F). Prepare a cupcake pan with 12 muffin liners. Mix flour, cocoa powder, baking powder, baking soda and salt in bowl. Set aside. Mix sugar, butter, buttermilk and eggs in a large bowl. Add dry ingredients to wet ingredients and mix until just combined. Stir in chocolate, but save 1/4 of the chocolate to put on top of muffins. Divide batter between 12 liners, filling them completely full. Sprinkle with remaining chocolate pieces. Bake for 18-21 minutes or until a cake tester comes out almost clean.
Chocolate chip cookies
makes 40-50 cookies
300 g all purpose flour
1/4 tsp salt
1/2 tsp baking soda
150 g butter, melted and cool
150 g light brown muscovado sugar (or light brown sugar)
90 g granulated sugar (90 g)
1/4 tsp vanilla powder (or 1/2 tsp vanilla extract)
1 large egg
1 large egg yolk
150 g dark chocolate (70%), chopped
150 g milk chocolate, chopped
Heat oven to 160°C (320F).
Sift flour, salt and baking soda into a bowl. Set aside.
Beat butter, sugars and vanilla in a bowl. Add the egg and egg yolk and beat until combined.
Add flour mixture and mix until a dough forms. Stir in chocolate. Roll evenly sized balls and put on a piece of baking paper (you’ll probably have to bake 2-3 sheets. Don’t forget to leave some space between cookies as they float out). Bake for 9-13 minutes.
WOW- the chunks of chocolate on top of the chocolate muffin batter is definitely my favorite picture. These look like they would be insanely chocolatey, and in that case I'm all for them 🙂 Gorgeous photos as usual!

I've just made these and the flavour is amazing – unfortunately I slightly overcooked them making them a bit crunchy on the top (mainly because my cake skewer was coming out dirty but that was due to the melted chocolate chips not raw cake as I thought). I will be trying this again – probably many times!

The only thing is that you really need a muffin tray, otherwise they are going to spread if you use only the paper molds. But the are equally delicious ♥ Oh, gosh! I can't stop eating!!

The chocolate chip muffins look SO DELICIOUS, as well as the chocolate chips! I've been searching for the perfect chocolate chip cookie for SO LONG! I'm planning to try this recipe today, but I just had a few questions… 🙂
1) Are the cookies hard after a couple days?
2) About how big are they? In the US, we use over 300g of all purpose flour and end up with only about 24 cookies.
3) How big should the rolled balls of dough be when I put them on the baking sheet to bake?

1. I wouldn't say they get hard, just.. hmm, chewy 🙂
2. They're kind of small. You could definitely make them bigger if you want to though I prefer my cookies bite-size!
3. That's really up to you! I generally use about 35 grams of dough for each cookie but for these i think I may have used a little less, about 25 grams or so.

Do you have the recipe in cups/tablespoons or do you think it's better to bake in grand since it's more accurate? I've never baked with grams before, and I only have an ounce scale measurer. 🙂

Well, I usually both measure and weigh when I bake to make sure my recipes are accurate, only problem is that I measure in deciliter and milliliter and I don't think that helps you, right?
Try googling for example: "300 g in oz" and you'll see the measurement right there without actually using a converter. Good luck!

Sorry to hear that, but it's either grams or ml's for me, and many people have asked for grams!

Both of these recipes sound amazing but I need the cup measurement not gram. I dont have a kitchen scale. Ill probably be surfing the internet trying to find a conversion table because my mouth is watering. So badly!

These muffins are fabulous! Big thumbs up on these. They are basically insanely tasty little chocolate cakes in muffin form. I'm lazy so I used dark chocolate baking chips instead of chopping up my own. I don't have a food scale either, but was able to find some good conversions specific to the ingredients (ie, 100g of cocoa powder isn't the same quantity of 100g of flour, which should be intuitive, but isn't). I'll definitely try the cookies next! Thanks from New Zealand.

I baked these muffins today and they came out beautiful. I only reduced the sugar by 50gr (I'm Asian so usually recipes online are too sweet for me). I freaked out a bit when I was mixing because my batter was much thicker than yours (maybe because of the cold weather, I'm not sure), but I baked them anyway and they were very very moist and delicious. Thank you!!!

I made these muffins two days ago and shared them with friends.. They were soooo delicious! Grate taste, I can say, maybe the best muffin I have had. Even after two days, they still taste very good. But I added more buttermilk, because the dough got very hard.
